Dr. Sugihara was an amazing person and a great researcher. He was part of the team that identified the organisms that are responsible for San Francisco Sourdough Bread. He was a world recognized authority on sourdough - he went to Italy to consult on the production of Panetone, which is classically made with sourdough. Most amazingly, perhaps, is that the San Francisco Sourdough bakers let him into their bakeries to observe and record how they made their bread.
He compiled their, essentially identical, methods and published them. And, now, here they are. Sadly, most of the recipes for San Francisco Sourdough Bread are far from authentic, mine included. This is the real deal. Enjoy!
