More About Our "Back To Bagels" Cookbook

When I closed my bakery, I stopped making bagels. It was a sad day, but making bagels at home just seemed like a hassle after having all the "right" equipment. Still, I MISSED bagels. REAL bagels. Bagels with a firm glossy crust and a rich chewy crumb. Bagels that had a great taste even before they were toasted, even without cream cheese, butter, or lox.

I put bagels so far out of my mind, I wasn't even aware of HOW MUCH I missed them until Gisele Hall, a friend and the owner of Mountain Tops Milling asked me to do a bagel baking class.

From the experiments for the class, this cookbook was born. A simplified version of one of the recipes in the book, for plain sourdough bagels, is on this web page. There is a lot more detail, a lot more pictures, lots more hand-holding, trouble shooting advice, and 8 more recipes in the book.

In talking to our customers, we have found that a real stumbling block to making bagels is the need for dried malt extract. Many people don't know where to find the stuff. You can go to health food stores, brewing supply houses, or just buy some from us. You might want to go ahead and order some while you're thinking about it.

Our Limited Lifetime Subscription - Many people ask us what we mean by our "limited lifetime subscription." This subscription will entitle you to any and all updates we make to the book(s) you are subscribed to as long as we continue to update the books. We do not guarantee that there will be updates to the books, just that you will receive them if you fulfill the terms of the limited lifetime subscription. If either you or we die, that is an obvious end to the subscription. We will not assign the subscription to your heirs and assigns, and cannot guarantee that our heirs will continue this venture. If, for any reason, you do not keep us updated as to your email address, we cannot maintain your subscription. If you let us know about any changes to your email address before your old email address is cancelled, we will gladly change your email address in our records at no charge.
