Flour Test Results Chart
More than a few people have commented that they'd like to have a single page with some sort of graph, or chart, of the results of the flour tests. So, here it is. All ratings are on the classic 1 - 10 scale, with 1 being just awful and 10 being perfect.
We looked at the rise of the breads with each flour, and then the quality of the breads. We also mention the protein content of the flours, as well as the price of the flours, which is liable to change at any time.
Also, with the exception of the cake flour, which was totally unsuited to bread making, all the flours in this test can make good breads. Using a better flour can help, but the most ingredient remains the skill of the baker.
